- 3 small potatoes, peeled and cut into eights

Instructions
- Cook the Potatoes: Boil the potatoes in salted water, then mash and set aside to cool.
- Cook the Onions: Caramelize the onions in butter until golden brown, then add to the potatoes along with cheese, gherkins, mustard, and thyme. Season with salt and pepper.
