Description

These Cheesy Baked Vegetable Rolls are the perfect balance of cheesy, savory, and healthy. Fresh sautéed vegetables wrapped in soft dough and baked to golden perfection with gooey melted cheese inside. They are an easy-to-make snack, appetizer, or light main dish, perfect for any occasion.

Ingredients

Scale

  • 1 sheet puff pastry or pizza dough (you can use crescent roll dough for a flakier texture)
  • 1 1/2 cups mixed vegetables (bell peppers, zucchini, spinach, mushrooms, onions, or any veggies of choice)
  • 1 1/2 cups shredded mozzarella cheese
  • 4 oz cream cheese (softened)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh parsley (optional for garnish)

Instructions

  1. Sauté the Vegetables:
Heat olive oil in a pan over medium heat. Sauté diced bell peppers, zucchini, mushrooms, and onions until soft (about 5-7 minutes). Add garlic powder, Italian seasoning, salt, and pepper. Remove from heat and cool slightly.

  2. Prepare the Cheese Filling:
In a bowl, mix together shredded mozzarella cheese and softened cream cheese. Add salt and pepper to taste. Stir until smooth.

  3. Roll Out the Dough:
Roll the puff pastry or pizza dough on a floured surface to your desired thickness. Cut dough into rectangles or squares (about 4-6 pieces per sheet).

  4. Assemble the Rolls:
Place a spoonful of the cheese mixture on each dough piece, followed by a spoonful of sautéed vegetables. Be careful not to overstuff.

  5. Roll and Seal:
Fold the dough over the filling and pinch the seams to seal the rolls tightly.

  6. Bake the Rolls:
Preheat oven to 375°F (190°C). Place rolls on a parchment-lined baking sheet. Lightly brush the tops with olive oil or melted butter. Bake for 15-20 minutes until golden brown and puffed.

  7. Garnish and Serve:
Let rolls cool slightly before serving. Garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

  • You can prepare the rolls ahead of time and store them in the fridge for up to a day before baking.
  • For an extra cheesy kick, add Parmesan or cheddar to the veggie filling.
  • For a richer flavor, brush the tops of the rolls with garlic butter before baking.
