Description

This Chicken Bacon Ranch Potato Bake is a delicious and hearty dish that combines tender chicken, crispy bacon, and flavorful ranch seasoning with roasted potatoes topped with melted cheese.


Ingredients

Potatoes:

  • 3 pounds russet potatoes (about 6-7 medium), cut into 1 inch chunks
  • 1/3 cup avocado oil or olive oil
  • 2 tablespoons hot sauce
  • 1 tablespoon garlic powder
  • 1 (1 ounce) Ranch seasoning packet (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Other Ingredients:

  • 2 pounds fresh boneless skinless chicken breasts, cut into 1 inch chunks
  • 1 cup bacon bits
  • 1 cup shredded cheddar cheese
  • sliced green onions for topping (optional)

Instructions

  1. Prep potatoes: Preheat oven to 425F. Combine potatoes with oil, hot sauce, garlic powder, Ranch seasoning, salt, and pepper. Roast for 45 minutes, stirring every 15 minutes.
  2. Prep chicken: Coat chicken with remaining Ranch seasoning. Set aside.
  3. Put it together: Layer bacon, cheese, chicken, remaining bacon, and cheese on top of the potatoes. Bake for 15-20 minutes.
  4. Serve: Enjoy with salad or a side veggie. Store leftovers in an airtight container.
