  • 2 tbsp unsalted butter
  • 56 chicken thighs
  • 1 tbs olive oil
  • 4 cloves garlic minced
  • 1/4 cup chicken stock
  • 1 10.5 oz can cream of chicken with herbs
  • 1 10.5 oz heavy cream (add heavy cream to cream of chicken can to measure)
  • 1 1/2 cup cheddar cheese mild or medium
  • 1/2 cup sour cream
  • 1/3 cup Boursin cheese
  • 3 tbs bayou city all purpose seasoning (divided)
  • 1 tbsp bayou city garlic pepper
  • 1 tsp onion powder
  • 1/2 tsp cayenne

Additional Ingredients:

  • 4 cups broccoli florets cooked
  • 4 cups white rice cooked
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 F (190 C)
  2. Cook the chicken: Season chicken thighs with olive oil and 2 tbs seasoning, cook for 6-7 minutes per side, shred or chop into pieces.
  3. Make the sauce: Cook garlic, deglaze with chicken stock, add cream of chicken soup, heavy cream, cheeses, and sour cream.
  4. Combine ingredients: Mix cooked rice, broccoli, and chicken. Add sauce, seasonings, salt, and pepper.
  5. Bake: Transfer mixture to a casserole dish, top with cheese, bake covered for 20 mins, then uncovered for 10-15 mins.
  6. Serve: Garnish with parsley and paprika before serving.
