Description
This Chicken Caesar Pasta Salad is a flavorful combination of tender chicken, al dente pasta, crisp lettuce, and creamy Caesar dressing, topped with garlic breadcrumbs and Parmesan cheese.

Pasta Salad Ingredients:
- 1 pound boneless skinless chicken breasts
- fine sea salt and freshly-ground black pepper
- 1 tablespoon olive oil
- 1 pound uncooked pasta (e.g., farfalle)
- 3 Romaine lettuce hearts (12 ounces), roughly chopped
- 1 1/2 cups Caesar dressing*
- Parmesan cheese, for topping
Garlic Breadcrumbs Ingredients:
- 1 tablespoon butter
- 2 cloves garlic, pressed or minced
- 1/2 cup Panko breadcrumbs
Instructions
- Prep the pasta water. Bring a large pot of generously-salted water to a boil over high heat.
- Cook the garlic breadcrumbs. Melt butter in a sauté pan, add garlic and breadcrumbs, sauté until golden. Set aside.
- Cook the chicken. Season, cook until done, slice into pieces.
- Cook the pasta. Cook until al dente, rinse with cold water.
- Toss the pasta salad. Combine pasta, lettuce, chicken, and dressing in a bowl.
- Serve. Garnish with garlic breadcrumbs, Parmesan cheese, and black pepper.
Notes
- If using homemade Caesar dressing, make a 1.5 batch.
- Refrigerate salad for up to 4 hours before serving chilled.
