For the chicken:
- 3/4 cup Shaoxing wine
- 1 tablespoon minced ginger
- 3 garlic cloves, minced
- 1 teaspoon kosher salt
- 2 1/2 pounds chicken wings
- 1 cup potato starch
- Oil for frying
For the chile topping:
- 4 to 6 chiles, thinly sliced
- 3 to 4 garlic cloves, thinly sliced
- 1 tablespoon butter
- 1/8 teaspoon ground white pepper
- 1/4 to 1/2 teaspoon Szechuan pepper-salt
Instructions
- Marinate the chicken: Combine wine, ginger, garlic, and salt. Add chicken, marinate for 20 minutes.
- Fry the chicken: Coat chicken in potato starch, fry until golden brown.
- Prepare the chile topping: Cook chiles and garlic in butter until browned. Pour over fried chicken and sprinkle with white pepper and pepper-salt.
