  • 3/4 cup Shaoxing wine
  • 1 tablespoon minced ginger
  • 3 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 2 1/2 pounds chicken wings
  • 1 cup potato starch
  • Oil for frying

For the chile topping:

  • 4 to 6 chiles, thinly sliced
  • 3 to 4 garlic cloves, thinly sliced
  • 1 tablespoon butter
  • 1/8 teaspoon ground white pepper
  • 1/4 to 1/2 teaspoon Szechuan pepper-salt

Instructions

  1. Marinate the chicken: Combine wine, ginger, garlic, and salt. Add chicken, marinate for 20 minutes.
  2. Fry the chicken: Coat chicken in potato starch, fry until golden brown.
  3. Prepare the chile topping: Cook chiles and garlic in butter until browned. Pour over fried chicken and sprinkle with white pepper and pepper-salt.
