Ingredients

For the graham crust (optional):

  • 3/4 cup graham cracker crumbs
  • 1 tbsp sugar
  • pinch kosher salt
  • 3 tbsp unsalted butter, melted

For the cheesecake:

  • 1 cup cottage cheese
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 2.5 tbsp sugar
  • 1.5 tbsp flour or cornstarch
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest
  • Optional: yogurt, strawberries, and granola for topping

Instructions

  1. For the graham crust (optional): Preheat oven and prepare pan. Combine crumbs, sugar, salt, and butter. Press into pan and bake.
  2. For the cheesecake: Blend all ingredients until smooth. Pour into crust and bake. Let cool and refrigerate.

Notes

  • This recipe can be easily doubled for larger pans.
  • If you don’t have a 6-inch springform pan, use a parchment sling for easy removal.
