For the graham crust (optional):
- 3/4 cup graham cracker crumbs
- 1 tbsp sugar
- pinch kosher salt
- 3 tbsp unsalted butter, melted
For the cheesecake:
- 1 cup cottage cheese
- 1/4 cup Greek yogurt
- 1 large egg
- 2.5 tbsp sugar
- 1.5 tbsp flour or cornstarch
- 1/2 tsp vanilla extract
- 1/2 tsp lemon zest
- Optional: yogurt, strawberries, and granola for topping
Instructions
- For the graham crust (optional): Preheat oven and prepare pan. Combine crumbs, sugar, salt, and butter. Press into pan and bake.
- For the cheesecake: Blend all ingredients until smooth. Pour into crust and bake. Let cool and refrigerate.
Notes
- This recipe can be easily doubled for larger pans.
- If you don’t have a 6-inch springform pan, use a parchment sling for easy removal.
