Main Ingredients:
- 2 1/2 cups green lentils, rinsed & drained
- 5 garlic cloves, minced & divided
- 1 large onion, finely chopped
- 3 large carrots, chopped
- 2 large celery stalks, chopped
- 1 tbsp avocado oil
- 28 oz can diced tomatoes, low sodium
- 12 cups vegetable broth, low sodium
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp salt
- Ground black pepper, to taste
- 3 bay leaves
- 3 handfuls of spinach
- 1/2 cup parsley, finely chopped
- Parmesan cheese, grated
Instructions
- Sauté Aromatics: Preheat a pot, sauté garlic, onion, carrots, and celery.
- Add Lentils & Spices: Stir in lentils, cumin, and oregano until fragrant.
- Cook Soup: Add tomatoes, broth, salt, pepper, and bay leaves. Simmer until lentils are tender.
- Finish Soup: Add spinach, garlic, parsley. Remove bay leaves and serve with Parmesan.
Notes
- You can customize this soup by adding other vegetables like bell peppers or zucchini.
- For a creamier texture, blend a portion of the soup before adding the spinach.
