Description

This Creamy Lentil Spinach Soup is a hearty and nutritious dish perfect for colder days. Packed with green lentils, fresh spinach, and flavorful herbs, this soup is both satisfying and delicious.

Main Ingredients:

  • 2 1/2 cups green lentils, rinsed & drained
  • 5 garlic cloves, minced & divided
  • 1 large onion, finely chopped
  • 3 large carrots, chopped
  • 2 large celery stalks, chopped
  • 1 tbsp avocado oil
  • 28 oz can diced tomatoes, low sodium
  • 12 cups vegetable broth, low sodium
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp salt
  • Ground black pepper, to taste
  • 3 bay leaves
  • 3 handfuls of spinach
  • 1/2 cup parsley, finely chopped
  • Parmesan cheese, grated

Instructions

  1. Sauté Aromatics: Preheat a pot, sauté garlic, onion, carrots, and celery.
  2. Add Lentils & Spices: Stir in lentils, cumin, and oregano until fragrant.
  3. Cook Soup: Add tomatoes, broth, salt, pepper, and bay leaves. Simmer until lentils are tender.
  4. Finish Soup: Add spinach, garlic, parsley. Remove bay leaves and serve with Parmesan.

Notes

  • You can customize this soup by adding other vegetables like bell peppers or zucchini.
  • For a creamier texture, blend a portion of the soup before adding the spinach.
