- 500 g (1lb) chicken thighs, cubed
- 1 tsp olive oil
- 2 tsp red wine vinegar
- 1 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp dried thyme
- Pinch of chilli flakes
- 1 tsp salt
- 1/2 tsp pepper
- For the sauce:
- 2 tbsp olive oil
- 1 onion, finely chopped
- 4 garlic cloves, crushed
- 1 tbsp paprika
- 1/2 tsp thyme
- 1/2 tsp chilli flakes
- 1/2 cup white wine
- 1 cup chicken stock
- 1/2 cup sour cream
- Salt and pepper to taste
- Pinch of sugar
Instructions
- Marinate the Chicken: Cut chicken into cubes, marinate with olive oil, red wine vinegar, paprika, oregano, thyme, and chilli flakes.
- Sear the Chicken: Cook marinated chicken in a skillet until seared, then set aside.
- Make the Sauce: Saute onion, garlic, add paprika, thyme, chilli flakes, white wine, chicken stock, sour cream, salt, pepper, and sugar.
- Combine and Cook: Add chicken back to the pan, simmer until sauce thickens and chicken is cooked through.
- Serve: Garnish with parsley and serve with bread or rice.
Notes
- You can adjust the level of spiciness by adding more or less chilli flakes.
- For a lighter version, you can use Greek yogurt instead of sour cream.
