Description

Creamy White Beans with Goat Cheese is a quick and flavorful dish that combines creamy beans with tangy goat cheese, sweet peas, and fresh vegetables. A perfect meal for one!


Ingredients

Units Scale
  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 400 g tin cannellini beans, drained (240g, or ~ 1 1/4 cups, when drained)
  • 2 tbsp St Helen’s Farm double goat’s cream
  • 50 g St Helen’s Farm goat’s cheese, grated (~ 1/2 cup when grated)
  • 50 g (~ 1/4 cup) frozen peas
  • Salt
  • Black pepper
  • 1 handful fresh rocket (arugula) – spinach would work well too
  • 5 cherry tomatoes, halved

Instructions

  1. Cook Beans: Heat oil in a pan, add garlic and beans. Cook until fragrant and beans soften.
  2. Add Cream and Cheese: Stir in goat’s cream and cheese until melted and smooth.
  3. Include Peas: Add peas, cook until thawed. Season with salt and pepper.
  4. Finish Dish: Add rocket, tomatoes, cook until wilted. Serve warm.

Notes

  • You can substitute spinach for rocket if preferred.
  • Feel free to add additional vegetables like bell peppers or zucchini for extra flavor and nutrients.
