- 1 15–ounce can petite diced tomatoes, undrained
- 1/2 cup beef stock or water
- 2 cups grated Cheddar cheese (12 ounces)
- 10 8-inch flour tortillas

Instructions
- Cook the beef: Saute ground beef and onion until cooked. Drain off grease and return beef to skillet.

- Assemble tacos: Fill tortillas with beef mixture and cheese. Fold in half.
