  • 1/2 cup light mayo
  • 2 Tablespoons lime juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt

Instructions

  1. Boil Yuca: Peel and cut yuca, boil for 10 minutes until fork-tender.
  2. Preheat Oven: Preheat to 425°F, line baking sheet.
  3. Toss & Bake: Toss yuca with oil, salt, paprika, and garlic powder. Bake for 30 minutes.
  4. Make Sauce: Blend cilantro, mayo, lime juice, garlic, and salt until smooth.
