Ingredients:
- 3 pounds yuca root
- 2 Tablespoons avocado oil
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
Sauce:
- 1 1/2 cups fresh cilantro
- 1/2 cup light mayo
- 2 Tablespoons lime juice
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
Instructions
- Boil Yuca: Peel and cut yuca, boil for 10 minutes until fork-tender.
- Preheat Oven: Preheat to 425°F, line baking sheet.
- Toss & Bake: Toss yuca with oil, salt, paprika, and garlic powder. Bake for 30 minutes.
- Make Sauce: Blend cilantro, mayo, lime juice, garlic, and salt until smooth.
