Pastry Dough:
- 1 cup warm milk
- 2 tsp active dried yeast
- 4 egg yolks
- 2 Tbsp sour cream
- 1/3 cup granulated sugar
- 3 cups all-purpose flour
- 1/4 tsp kosher salt
- 3 oz unsalted butter
Cream Cheese Filling:
- 1 1/3 cup of cream cheese
- 1/2 cup of sugar
- 1 tsp of vanilla
- 1/2 cup jam of choice (optional)
Streusel Topping:
- 1/3 cup of flour
- 1/3 cup of sugar
- 3 tbsp of melted butter
Egg wash:
- 2 egg yolks
- 1 Tbsp water
Instructions
- Check the yeast: Combine yeast with milk and sugar, allow to proof.
- Make the Pastry Dough: Mix all dough ingredients until smooth.
- Add butter & knead: Incorporate butter and knead until tacky.
- Let rise until doubled: Allow dough to rise in a warm place.
- Meanwhile, make the cream cheese filling: Whip together cream cheese, sugar, and vanilla.
- Make the streusel topping: Combine flour, sugar, and melted butter.
- Make the egg wash: Whisk together egg yolks and water.
- Divide & shape the pastry dough: Divide dough into pieces and shape into balls.
- Fill with cream cheese filling: Fill each dough piece with cream cheese filling.
- Let rise until doubled: Allow danishes to double in size.
- Brush with egg wash & top with streusel: Brush danishes with egg wash and sprinkle with streusel.
- Bake: Bake in a preheated oven until golden.
Notes
- You can add jam or dried fruits to the cream cheese filling for variety.
