Description

This easy garlic butter shrimp and rice recipe combines tender shrimp with flavorful garlic butter sauce over a bed of fluffy rice, making it a delicious and satisfying meal.

Main Ingredients:

  • 1 onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 1/2 cups white rice
  • 1/2 cup white wine (optional)
  • 400g/14 oz crushed tomatoes
  • 4 cups chicken/fish stock
  • 2 cups frozen peas
  • 1 tsp salt
  • Pepper to taste

For the shrimp:

  • 500g/1lb shrimp/prawns, shelled and deveined
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the garlic butter sauce:

  • 2 tbsp butter
  • 1/2 cup white wine
  • 1/2 cup chicken/fish stock
  • 1 tbsp fresh lemon juice

To serve:

  • Chopped parsley
  • Lemon slices

Instructions

  1. Sauté onion and garlic: Heat olive oil in a pan, sauté onion and garlic until fragrant.
  2. Cook rice: Add rice, wine, tomatoes, stock, peas, salt, and pepper. Simmer until rice is cooked.
  3. Fry shrimp: Cook shrimp until golden brown, set aside.
  4. Make garlic butter sauce: Cook butter, garlic, wine, stock, and lemon juice until reduced.
  5. Combine: Mix shrimp with rice, cover and steam for 5 minutes.
  6. Serve: Serve with garlic butter sauce, lemon slices, and parsley.
