  • 3/4 cup fresh lime juice (from about 6 large limes)
  • 1 large tomato, diced
  • 1 large avocado, diced
  • 1/2 cup red onion, minced
  • 1/2 cup cilantro, minced
  • 1 jalapeno, seeded & diced
  • Salt and pepper, to taste (about 1/2 teaspoon salt recommended)

Instructions

  1. Thaw Shrimp: If using frozen shrimp, thaw in warm tap water for 10 minutes.
  2. Prepare Lime Juice: Squeeze fresh lime juice into a bowl.
  3. Marinate Shrimp: Dice shrimp and marinate in lime juice.
  4. Prepare Vegetables: Dice tomato, avocado, red onion, cilantro, and jalapeno.
  5. Combine Ingredients: Mix vegetables with marinated shrimp.
  6. Season and Chill: Season with salt and pepper, then chill before serving.
