Description

This Greek Chicken Orzo Bake is a delicious one-pan meal that combines tender chicken, orzo pasta, spinach, tomatoes, and a creamy cheese sauce. Baked to perfection, it’s a comforting and flavorful dish that the whole family will love.

Main Ingredients:

  • 2 large chicken breasts – about 3 cups cooked – diced
  • 1 Tbsp olive oil
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 16 oz orzo pasta – uncooked
  • 3 cups baby spinach – about 3 handfuls
  • 2 cups cherry or grape tomatoes – halved

Cheese and Seasoning:

  • 1 1/2 cups shredded mozzarella cheese – divided in half
  • 2/3 cup freshly grated parmesan cheese – divided in half
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp dried oregano
  • Salt and pepper – to taste

Optional to Serve:

  • Crumbled feta or chopped fresh parsley for garnish

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. Cook chicken: Cook chicken breasts in a skillet, then dice into bite-sized pieces.
  3. Mix ingredients: In the casserole dish, combine broth, cream, orzo, spinach, tomatoes, half of mozzarella and parmesan, lemon juice, oregano, salt, and pepper.
  4. Add chicken: Mix in diced chicken and spread mixture evenly.
  5. Add cheese: Sprinkle remaining mozzarella and parmesan on top.
  6. Bake: Bake for 40-45 minutes until orzo is tender.
  7. Rest and serve: Let rest for 10 minutes, then garnish with feta or parsley before serving.

Notes

  • If using pre-cooked chicken, skip the cooking step and simply dice the chicken.
  • This dish can be customized with additional veggies like bell peppers or olives.
