Main Ingredients:
- 2 large chicken breasts – about 3 cups cooked – diced
- 1 Tbsp olive oil
- 3 cups chicken broth
- 1 cup heavy cream
- 16 oz orzo pasta – uncooked
- 3 cups baby spinach – about 3 handfuls
- 2 cups cherry or grape tomatoes – halved
Cheese and Seasoning:
- 1 1/2 cups shredded mozzarella cheese – divided in half
- 2/3 cup freshly grated parmesan cheese – divided in half
- 1 Tbsp fresh lemon juice
- 1/2 tsp dried oregano
- Salt and pepper – to taste
Optional to Serve:
- Crumbled feta or chopped fresh parsley for garnish
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
- Cook chicken: Cook chicken breasts in a skillet, then dice into bite-sized pieces.
- Mix ingredients: In the casserole dish, combine broth, cream, orzo, spinach, tomatoes, half of mozzarella and parmesan, lemon juice, oregano, salt, and pepper.
- Add chicken: Mix in diced chicken and spread mixture evenly.
- Add cheese: Sprinkle remaining mozzarella and parmesan on top.
- Bake: Bake for 40-45 minutes until orzo is tender.
- Rest and serve: Let rest for 10 minutes, then garnish with feta or parsley before serving.
Notes
- If using pre-cooked chicken, skip the cooking step and simply dice the chicken.
- This dish can be customized with additional veggies like bell peppers or olives.
