Description

A refreshing and creamy Green Goddess Salad packed with nutritious greens, crunchy veggies, and a flavorful herb-infused dressing. Topped with avocado, feta cheese, and salt and vinegar chips for added texture and taste.


Ingredients

For the dressing:

  • 1/3 cup whole milk plain Greek yogurt
  • 1/2 cup mayonnaise
  • 1 and 1/2 tablespoons lemon juice
  • 1 teaspoon fish sauce
  • 1 garlic clove
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 medium avocado
  • 1/4 cup green onions
  • 1/2 cup fresh parsley
  • 1/3 cup fresh basil
  • 1/4 cup fresh dill
  • 1/4 cup fresh cilantro

For the salad:

  • 1/2 head green cabbage
  • 6 ounces fresh baby spinach
  • 1 large English cucumber
  • 1/4 cup green onions
  • 1 and 1/2 medium avocados

Optional toppings:

  • 1/2 cup feta cheese
  • 1 and 1/2 cups salt and vinegar kettle chips
  • Crushed red pepper

Instructions

  1. Create the dressing: Blend yogurt, mayo, lemon juice, fish sauce, garlic, salt, pepper, avocado, green onions, parsley, basil, dill, and cilantro until smooth.
  2. Prepare the salad: Chop cabbage, spinach, cucumber, and green onions. Toss with dressing, top with avocado, feta, chips, and crushed red pepper.

Notes
