For the dressing:
- 1/3 cup whole milk plain Greek yogurt
- 1/2 cup mayonnaise
- 1 and 1/2 tablespoons lemon juice
- 1 teaspoon fish sauce
- 1 garlic clove
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 medium avocado
- 1/4 cup green onions
- 1/2 cup fresh parsley
- 1/3 cup fresh basil
- 1/4 cup fresh dill
- 1/4 cup fresh cilantro
For the salad:
- 1/2 head green cabbage
- 6 ounces fresh baby spinach
- 1 large English cucumber
- 1/4 cup green onions
- 1 and 1/2 medium avocados
Optional toppings:
- 1/2 cup feta cheese
- 1 and 1/2 cups salt and vinegar kettle chips
- Crushed red pepper
Instructions
- Create the dressing: Blend yogurt, mayo, lemon juice, fish sauce, garlic, salt, pepper, avocado, green onions, parsley, basil, dill, and cilantro until smooth.
- Prepare the salad: Chop cabbage, spinach, cucumber, and green onions. Toss with dressing, top with avocado, feta, chips, and crushed red pepper.
