These Healthy Chicken Enchiladas are packed with veggies, tender chicken, and a flavorful red enchilada sauce. Topped with cheese and baked to perfection, they make a delicious and nutritious meal for the whole family.

- 1 1/2 cups red enchilada sauce
- 1/2 tablespoon olive oil
- 1 cup diced onion
- 1 1/2 cups diced bell pepper
- 1 cup diced zucchini
- 3 cups shredded chicken
- 1/2 heaping cup greek yogurt
- 1 tablespoon chili powder
- 1/2 tablespoon dried oregano
- 10 corn tortillas
- 1 cup shredded cheese
- salt and pepper, to taste
- optional toppings: cilantro, avocado, jalapenos, greek yogurt/sour cream
Instructions
- Make enchilada sauce: Prepare or use store-bought enchilada sauce.
- Preheat the oven: Set to 350 degrees and spread 3 tbsp of sauce in a baking dish.
- Make veggie and chicken mixture: Saute onion, bell pepper, zucchini, then mix with chicken, greek yogurt, spices, and sauce.
- Warm your tortillas: Microwave them wrapped in a damp cloth until pliable.
- Roll enchiladas: Fill tortillas, roll, place in dish, cover with sauce and cheese.
- Bake: Cover with foil, bake for 15 mins, then remove foil and bake for another 5 mins.
- Enjoy: Garnish with toppings and serve hot.

- To save time, make the sauce and chicken in advance.
