- 4 medium sweet potatoes
- 1 pound lean ground beef (85-90%)
- 1/4 cup hot honey (divided)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
Spices:
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper

- 2 tablespoons olive oil (divided)
- 2 tablespoons fresh parsley or cilantro, chopped
- 1/2 cup crumbled feta or goat cheese (optional)
- 2 green onions, sliced
- 1 tablespoon lime juice
- 1 avocado, sliced (optional)
Instructions
- Preheat oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice and season sweet potatoes: Slice sweet potatoes lengthwise, score the flesh, brush with olive oil, and season with salt and pepper. Roast cut-side down for 30-40 minutes.
- Sauté onion and garlic: In a skillet, sauté onion for 3-4 minutes, then add garlic and cook for 30 seconds.
- Cook ground beef: Add ground beef to the skillet and cook for 6-8 minutes until browned. Drain excess grease if needed.
- Season and simmer: Add spices, hot honey, and optional mashed sweet potato flesh. Simmer until slightly thickened.
- Fill sweet potato boats: Scoop out a portion from roasted sweet potatoes to create boats. Fill with beef mixture and bake for 5-7 minutes.
- Top and serve: Top with hot honey, cheese, herbs, green onions, lime juice, and avocado. Rest 5 minutes before serving.
