These Hot Honey Ground Beef & Sweet Potato Boats are a delicious and hearty meal option. The sweet potatoes are loaded with flavorful ground beef, topped with hot honey, feta cheese, and fresh herbs.

  • 4 medium sweet potatoes
  • 1 pound lean ground beef (85-90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced

Spices:

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice and season sweet potatoes: Slice sweet potatoes lengthwise, score the flesh, brush with olive oil, and season with salt and pepper. Roast cut-side down for 30-40 minutes.
  3. Sauté onion and garlic: In a skillet, sauté onion for 3-4 minutes, then add garlic and cook for 30 seconds.
  4. Cook ground beef: Add ground beef to the skillet and cook for 6-8 minutes until browned. Drain excess grease if needed.
  5. Season and simmer: Add spices, hot honey, and optional mashed sweet potato flesh. Simmer until slightly thickened.
  6. Fill sweet potato boats: Scoop out a portion from roasted sweet potatoes to create boats. Fill with beef mixture and bake for 5-7 minutes.
  7. Top and serve: Top with hot honey, cheese, herbs, green onions, lime juice, and avocado. Rest 5 minutes before serving.
