  • 1.5 kg / 3 lb chicken thighs (or breast)
  • 1 tbsp vegetable oil
  • Marinade:
  • 3/4 cup pineapple juice
  • 1 1/2 tbsp ginger, freshly grated
  • 1 1/2 tbsp garlic, freshly grated
  • 1/2 cup tomato ketchup
  • 1/2 cup soy sauce
  • 1/4 cup sherry or Chinese cooking wine
  • 1/4 cup brown sugar
  • 1 tbsp Sriracha
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Garnishes, optional:
  • Sliced green onion
  • Pineapple slices, grilled

Instructions

  1. Marinade: Mix marinade ingredients, reserving 3/4 cup for basting. Marinate chicken for 24-48 hours.
  2. Cooking: Brush grill with oil, cook chicken on medium-high heat for 10 minutes, basting with reserved marinade.
  3. Transfer chicken to a plate, cover with foil, and let rest for 3 minutes before serving.

Notes

  • Use canned pineapple juice for best results.
  • Fresh ginger and garlic add a special flavor to the dish.
