Main Ingredients:
- 1 lb kielbasa sausage, sliced into 1/2-inch pieces
- 1 lb baby potatoes, halved or quartered
- 1 head broccoli, cut into florets
- 1 red bell pepper, chopped
- 1 red onion, cut into wedges
Honey Garlic Sauce:
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven: Preheat the oven to 400°F (200°C).
- Prepare vegetables and sausage: Toss kielbasa, potatoes, broccoli, bell pepper, and onion with olive oil. Spread on a baking sheet.
- Roast: Roast for 20-25 minutes until potatoes are tender.
- Make sauce: Whisk together honey, garlic, soy sauce, olive oil, oregano, pepper, and salt.
- Coat with sauce: Drizzle sauce over roasted ingredients and toss.
- Finish roasting: Return to oven for 5-10 minutes until caramelized.
- Serve: Garnish with parsley or sesame seeds and serve hot.
