Ingredients for the Filling:

  • 2 1/2 lbs peaches (8 medium), fresh or frozen*
  • 2 Tbsp fresh lemon juice, (omit if using frozen fruit)
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar

Ingredients for the Topping:

  • 1 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/8 tsp sea salt
  • 8 Tbsp 1 stick cold, unsalted butter, diced
  • 1/2 cup old fashioned rolled oats or quick-cooking oats
  • 1 cup sliced almonds, divided

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350 degrees F and butter a 9×12 casserole baking dish.
  2. Prepare the peaches: Blanch, peel, pit, and slice the peaches. Toss with lemon juice and coat with flour and sugar.
  3. Make the topping: Combine flour, sugars, and salt. Add butter and pulse in a food processor until crumbly. Mix in oats and almonds.
  4. Assemble and bake: Spread the topping over the peaches, sprinkle with almonds, and bake for 45 minutes until golden and bubbly.

Notes

  • If using frozen fruit, make sure to thaw and drain excess juice.
  • If you don’t have a food processor, use a pastry blender to cut the butter into the dry ingredients.
