  • 2 teaspoons all spice OR mixed spice
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 1/2 cups (375ml) warm milk
  • Zest of 1 to 2 oranges
  • 50g (3.5 tablespoons) unsalted butter, melted and cooled
  • 1 egg, at room temperature
  • 1/4 cup (35g) extra bread flour
  • 1/2 cup (75g) flour (any white flour)
  • 5 tablespoons water
  • 1 tablespoon apricot jam
  • 2 teaspoons water

Instructions

  1. Mix Dry Ingredients: Combine yeast, sugar, flour, cinnamon, all spice, and salt.
  2. Add Wet Ingredients: Pour in milk, orange zest, melted butter, and egg.
  3. Knead Dough: Mix until smooth, then knead until elastic.
  4. Rise Dough: Let dough double in size.
  5. Shape Buns: Cut, shape, and let rise again.
  6. Bake: Pipe crosses, bake until golden.
  7. Glaze: Brush warm buns with apricot glaze.
