Description

These Pineapple Chicken Tacos are a delicious and easy-to-make meal option. The juicy chicken is seasoned with smoked paprika and chili powder, then topped with a fresh pineapple salsa for a burst of flavor in every bite.

  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup fresh pineapple, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas

Instructions

  1. Toss the diced chicken in a bowl with olive oil, smoked paprika, chili powder, garlic powder, and salt until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken in a single layer and cook undisturbed for 3 minutes to develop a crust.
  3. Stir the meat and continue cooking for another 4 to 5 minutes until fully cooked through. Remove from heat.
  4. Combine the diced pineapple, red onion, cilantro, and lime juice in a small bowl to make the salsa.
  5. Warm the tortillas in a dry skillet or microwave, then assemble by adding the cooked meat and topping generously with the fresh salsa.

Notes

  • Store the meat and salsa in separate containers if saving leftovers.
  • Chicken thighs can be substituted for breasts for a juicier result.
