Description

Ingredients

  • 26 garlic cloves, peeled
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 2 medium onions, sliced
  • 2 teaspoons chopped fresh thyme
  • 18 garlic cloves, smashed and peeled
  • 4 cups chicken broth
  • 1/2 cup whipping cream
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 1 large russet potato, cut into chunks (optional)
  • 4 lemon wedges

Instructions

  1. Make the roasted garlic: Preheat the oven, peel and roast garlic cloves in oil until tender.
  2. Make the soup: Saute onions, thyme, and garlic, then add broth and simmer until tender. Puree, add cream, season, and serve with Parmesan and lemon.
  3. Make the Parmesan Crisp Garnish: Bake grated Parmesan until crisp, then serve with the soup.

Notes

  • The roasted garlic can be made ahead for convenience.
  • The recipe can be doubled and refrigerated for a few days.
