- 26 garlic cloves, peeled
- 2 Tablespoons olive oil
- 2 Tablespoons butter
- 2 medium onions, sliced
- 2 teaspoons chopped fresh thyme
- 18 garlic cloves, smashed and peeled
- 4 cups chicken broth
- 1/2 cup whipping cream
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup finely grated Parmesan cheese
- 1 large russet potato, cut into chunks (optional)
- 4 lemon wedges
Instructions
- Make the roasted garlic: Preheat the oven, peel and roast garlic cloves in oil until tender.
- Make the soup: Saute onions, thyme, and garlic, then add broth and simmer until tender. Puree, add cream, season, and serve with Parmesan and lemon.
- Make the Parmesan Crisp Garnish: Bake grated Parmesan until crisp, then serve with the soup.
