- 12 ounces shrimp – peeled and deveined
- 1/2 teaspoon salt – divided
- 1/4 teaspoon pepper – divided
- 3 tablespoons vegetable or canola oil – divided
- 12 ounces chicken breast – diced into small pieces
- 1/2 large yellow onion – diced
- 3 cloves garlic – minced
- 2 1/2 cups cold cooked rice
- 2 cups frozen peas and carrots
- 3 large eggs – beaten
- 3–4 tablespoons soy sauce – adjust to taste
- 1 1/2 teaspoons sesame oil
Instructions
- Season the shrimp: Season shrimp with half the salt and pepper.
- Cook shrimp: Cook shrimp in oil until pink, then set aside.
- Season and cook chicken: Season chicken with remaining salt and pepper. Cook chicken and onion until chicken is cooked.
- Add garlic: Add garlic to pan and cook until fragrant.
- Prepare rice: Stir-fry rice in pan until heated through.
- Add remaining ingredients: Combine chicken, vegetables, rice, peas, and carrots in pan.
- Cook eggs: Scramble eggs in pan.
- Combine everything: Add shrimp, soy sauce, and sesame oil to pan, stir well.
- Adjust seasoning and serve: Taste and adjust with soy sauce if needed. Serve warm.

- You can customize this recipe by adding other vegetables like bell peppers or broccoli.
