Ingredients

  • 1/2 teaspoon salt – divided
  • 1/4 teaspoon pepper – divided
  • 3 tablespoons vegetable or canola oil – divided
  • 12 ounces chicken breast – diced into small pieces
  • 1/2 large yellow onion – diced
  • 3 cloves garlic – minced
  • 2 1/2 cups cold cooked rice
  • 2 cups frozen peas and carrots
  • 3 large eggs – beaten
  • 34 tablespoons soy sauce – adjust to taste
  • 1 1/2 teaspoons sesame oil

Instructions

  1. Season the shrimp: Season shrimp with half the salt and pepper.
  2. Cook shrimp: Cook shrimp in oil until pink, then set aside.
  3. Season and cook chicken: Season chicken with remaining salt and pepper. Cook chicken and onion until chicken is cooked.
  4. Add garlic: Add garlic to pan and cook until fragrant.
