Description

This Slow Cooker Stuffed Peppers Recipe is a delicious and easy-to-make dish that combines bell peppers, ground beef, rice, and cheese for a hearty meal.


Ingredients

  • 7 bell peppers
  • 1 cup instant white rice
  • 1 pound ground beef
  • 1 cup diced onions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon minced garlic
  • 28 oz crushed tomatoes
  • 2 cups shredded cheddar cheese

Instructions

  1. Prepare Slow Cooker: Spray slow cooker with nonstick cooking spray.
  2. Clean Peppers: Cut tops off bell peppers, remove ribs and seeds, and place in slow cooker.
  3. Cook Rice: Cook rice according to package directions and set aside.
  4. Cook Beef Mixture: Cook ground beef, onions, salt, pepper, and garlic in a skillet. Drain fat and mix with cooked rice, crushed tomatoes, and 1 cup of cheese.
  5. Fill Peppers: Stuff each pepper with beef mixture.
  6. Cook: Cook on low for 4-5 hours. Top with remaining cheese and melt before serving.

Notes

  • I do not spray slow cooker normally, but it’s needed in this recipe.
  • Yellow, red, and orange bell peppers can be used for variation.
  • Add garlic at the end to prevent burning.
