This Slow Cooker Stuffed Peppers Recipe is a delicious and easy-to-make dish that combines bell peppers, ground beef, rice, and cheese for a hearty meal.

- 7 bell peppers
- 1 cup instant white rice
- 1 pound ground beef
- 1 cup diced onions
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon minced garlic
- 28 oz crushed tomatoes
- 2 cups shredded cheddar cheese
Instructions
- Prepare Slow Cooker: Spray slow cooker with nonstick cooking spray.
- Clean Peppers: Cut tops off bell peppers, remove ribs and seeds, and place in slow cooker.
- Cook Rice: Cook rice according to package directions and set aside.
- Cook Beef Mixture: Cook ground beef, onions, salt, pepper, and garlic in a skillet. Drain fat and mix with cooked rice, crushed tomatoes, and 1 cup of cheese.
- Fill Peppers: Stuff each pepper with beef mixture.
- Cook: Cook on low for 4-5 hours. Top with remaining cheese and melt before serving.
Notes
- I do not spray slow cooker normally, but it’s needed in this recipe.
- Yellow, red, and orange bell peppers can be used for variation.
- Add garlic at the end to prevent burning.
