Ingredients

Units Scale

Dry Ingredients:

  • 2 cups (250 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Wet Ingredients:

  • 3 ripe bananas, mashed (about 1 1/4 cups)
  • 6 tablespoons unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup (61 g) buttermilk, room temperature
  • 1 teaspoon vanilla

Additional:

  • 1 cup (166 g) strawberries, diced

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Spray a loaf pan with nonstick cooking spray.
  2. Mix dry ingredients: Sift together flour, baking powder, baking soda, and salt.
  3. Mash bananas: Mash bananas in a separate bowl.
  4. Cream butter and sugar: Cream butter and sugar in a mixer.
  5. Add wet ingredients: Add egg, buttermilk, and vanilla to the butter mixture.
  6. Combine wet and dry ingredients: Gradually add flour mixture to wet ingredients.
  7. Add bananas and strawberries: Fold in mashed bananas and floured strawberries.
  8. Bake: Pour batter into the pan and bake for 55-60 minutes.
  9. Cool: Let the bread cool before serving.

Notes

  • Make sure not to overmix the batter to keep the bread light and tender.
  • Tossing the strawberries in flour helps prevent them from sinking to the bottom of the loaf.
