Main Ingredients:
- 24 jumbo pasta shells
- 1/2 tbsp olive oil
- 1/2 onion, chopped
- 1 lb. ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 4 oz. cream cheese
- 1 cup shredded cheddar cheese
Garnish:
- sour cream
- 2 roma tomatoes, chopped
- 1/4 cup chopped green onion
- 2 tbsp chopped cilantro
Instructions
- Cook Pasta Shells: Cook jumbo pasta shells according to package directions, drain, and let dry on paper towels.
- Saute Onion and Beef: In a skillet, saute onions, then add ground beef and taco seasoning, cook until browned.
- Add Salsa and Cream Cheese: Stir in salsa and cream cheese until melted.
- Fill Shells: Fill shells with taco meat, place in a casserole dish, top with cheddar cheese.
- Bake: Cover with foil, bake for 15 minutes, then remove foil and bake for an additional 5 minutes.
- Garnish and Serve: Top with sour cream, tomatoes, green onion, and cilantro.
