Ingredients

Units Scale

Main ingredients:

  • 2 cups whipping cream (33% fat)
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla bean paste (or vanilla extract or seeds from 1 vanilla bean)
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 egg yolks
  • 1/3 cup granulated white sugar
  • 1/2 cup granulated white sugar

Instructions

  1. Preheat Oven: Preheat oven to 325℉ and arrange ramekins in a water bath.
  2. Mix Cream Mixture: Heat cream, sugar, vanilla, and salt in a saucepan until scalding. Remove from heat, add vanilla extract, and let steep.
  3. Whisk Egg Yolks: In a bowl, whisk egg yolks with sugar until thickened.
  4. Combine Mixtures: Gradually add cream to egg yolks, whisking constantly.
  5. Bake: Pour custard into ramekins, create water bath, bake for 25-30 mins.
  6. Cool and Serve: Cool custards, refrigerate, caramelize sugar on top before serving.

Notes

  • Be careful not to overbake the custards; they should be set but slightly jiggly in the center when done.
  • For a smoother custard, strain the egg mixture before pouring into ramekins.
