Zucchini Rollatini:
- 4–5 zucchinis sliced

- 1 lb (500g) fresh spinach, chopped and cooked

- 1 tbsp Italian seasoning
- Pinch of salt to taste
- 1 cup (240ml) marinara sauce

Instructions
- Preheat Oven: Set your oven to 400°F (200°C).
- Prepare and Cook Spinach: Wash and cook spinach until wilted.
- Prepare the Zucchini: Slice, bake, and cool zucchinis.
- Prepare the Filling: Mix vegan ricotta, spinach, basil, seasoning, and salt.
- Assemble the Dish: Spread filling on zucchini slices, roll up, and place in baking dish.
