Description

This Vegetarian Meatloaf Recipe is a flavorful alternative to traditional meatloaf, combining hearty brown rice, nuts, mushrooms, and a blend of herbs and cheeses for a satisfying vegetarian main dish.

Main Ingredients:

  • 1 1/2 cups cooked brown rice
  • 1 1/2 cups walnuts
  • 1/2 cup cashews
  • 1 yellow onion
  • 3 cloves garlic
  • 3 ounces shiitake mushrooms
  • 3 ounces baby bella mushrooms (aka cremini)
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons olive oil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage

Additional Ingredients:

  • 4 large eggs
  • 1 cup cottage cheese
  • 12 ounces Swiss cheese, grated
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a loaf pan.
  2. Prepare the ingredients: In a food processor, pulse the walnuts, cashews, onion, garlic, and mushrooms until finely chopped. Transfer to a bowl and mix with rice, parsley, olive oil, herbs, eggs, cheeses, salt, and pepper.
  3. Form the loaf: Press the mixture into the prepared loaf pan and bake for about 1 hour until golden and set.
