- Zest of 2 medium lemons
- 1/4 cup (60 ml) freshly squeezed lemon juice
- 2 teaspoons freshly cracked black pepper
- 3 garlic cloves, minced
- 1/4 cup (60 ml) extra virgin olive oil
- 1 teaspoon salt
- 2 tablespoons fresh parsley, chopped (optional)

Instructions
- Cut chicken breasts into 1-inch cubes, keeping pieces uniform for even cooking.
- In a medium bowl, whisk together lemon zest, lemon juice, cracked black pepper, minced garlic, olive oil, and salt.
- Add chicken cubes to the marinade and toss gently to coat. Cover and refrigerate for at least 30 minutes and up to 2 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread marinated chicken pieces onto skewers, leaving space between pieces for even cooking.
- Preheat grill to medium-high heat (around 400°F / 204°C).
- Grill skewers for 4-5 minutes per side, turning once or twice, until grill marks appear and internal temperature reaches 165°F (74°C).
- Remove skewers from grill and let rest for 5 minutes to redistribute juices.
- Sprinkle with chopped fresh parsley before serving.
