  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Cut chicken breasts into 1-inch cubes, keeping pieces uniform for even cooking.
  2. In a medium bowl, whisk together lemon zest, lemon juice, cracked black pepper, minced garlic, olive oil, and salt.
  3. Add chicken cubes to the marinade and toss gently to coat. Cover and refrigerate for at least 30 minutes and up to 2 hours.
