- 2 carrots, diced

- 2 tbsp. yellow mustard
- 1 (16-oz.) diced tomatoes, drained
- 3 c. low-sodium chicken broth
- 2 c. shredded cheddar cheese, plus more for garnish
- 1 c. half and half
- 3 tbsp. all-purpose flour
For Serving:

Instructions
- Cook Bacon and Vegetables: In a pot, cook bacon until crispy, then sauté onion, celery, carrot, and garlic until soft.
- Cook Ground Beef: Add ground beef, mustard, salt, and pepper, and cook until browned.
- Add Ingredients: Stir in tomatoes, broth, and simmer. Then add cheese, cream, and flour to thicken.
