  • 2 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 2 green bell pepper, chopped
  • 6 cups chopped green cabbage
  • 2 cups chopped tomatoes or 1 can diced tomatoes
  • 1 tablespoon tomato paste (optional)
  • 5 cups low-sodium vegetable broth or water
  • 2 bay leaves
  • 1 teaspoon mixed dried herbs or Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon red chili flakes (adjust to taste)
  • Salt to taste
  • 1 tablespoon lemon juice or apple cider vinegar
  • 6 tablespoons chopped parsley or cilantro

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onion and sauté until softened.
  3. Add garlic and cook briefly.
  4. Add carrots, celery, bell pepper and cook, stirring frequently.
  5. Add tomatoes, tomato paste, herbs, spices, and salt and cook for a few minutes.
  6. Add cabbage and broth, then simmer until vegetables are tender.
  7. Remove bay leaves, stir in lemon juice, adjust seasoning, and garnish before serving.

Notes

  • You can customize the spice level by adjusting the amount of chili flakes.
  • This soup can be made in an Instant Pot for a quicker cooking time.
  • If using a slow cooker, allow for a longer cooking time to enhance flavors.
