Main Ingredients:
- 1 tablespoon olive oil
- 2 medium onion, chopped
- 3 garlic cloves, minced
- 4 carrots, chopped
- 4 celery stalks, chopped
- 2 green bell pepper, chopped
- 6 cups chopped green cabbage
- 2 cups chopped tomatoes or 1 can diced tomatoes
- 1 tablespoon tomato paste (optional)
- 5 cups low-sodium vegetable broth or water
- 2 bay leaves
- 1 teaspoon mixed dried herbs or Italian seasoning
- 1/2 teaspoon black pepper
- 1 teaspoon red chili flakes (adjust to taste)
- Salt to taste
- 1 tablespoon lemon juice or apple cider vinegar
- 6 tablespoons chopped parsley or cilantro
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add onion and sauté until softened.
- Add garlic and cook briefly.
- Add carrots, celery, bell pepper and cook, stirring frequently.
- Add tomatoes, tomato paste, herbs, spices, and salt and cook for a few minutes.
- Add cabbage and broth, then simmer until vegetables are tender.
- Remove bay leaves, stir in lemon juice, adjust seasoning, and garnish before serving.

- You can customize the spice level by adjusting the amount of chili flakes.
- This soup can be made in an Instant Pot for a quicker cooking time.
