- 1 tbsp olive oil
- 4 tbsp unsalted butter divided (1/2 stick)
- 1 lb. Yukon Gold potatoes diced into 1/2-inch cubes, or red-skinned or fingerling potatoes
- 4 cloves garlic minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/2 tsp ground pepper
- 1 1/2 lbs. sirloin steak cut into 1-inch cubes, or try beef tenderloin, NY strip steak, or stir fry meat
- freshly chopped parsley optional, for garnish
Instructions
- Heat skillet: Heat a cast iron skillet over medium-high heat with olive oil and 2 tbsp of butter until melted.
- Cook potatoes: Add potatoes, garlic, herbs, salt, and pepper. Cook until tender, then set aside.
- Cook steak: Increase heat and add remaining butter, then cook steak until desired doneness. Remove from heat.
- Combine: Add potatoes back to skillet and toss with steak. Adjust seasoning if needed.
- Serve: Top with parsley and enjoy!
Notes
- If potatoes are not tender but starting to brown, add water and cover to steam until done.
- Avoid overcrowding the pan for even cooking.
- Check steak doneness using a meat thermometer for best results.
