Ingredients

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter divided (1/2 stick)
  • 1 lb. Yukon Gold potatoes diced into 1/2-inch cubes, or red-skinned or fingerling potatoes
  • 4 cloves garlic minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1 1/2 lbs. sirloin steak cut into 1-inch cubes, or try beef tenderloin, NY strip steak, or stir fry meat
  • freshly chopped parsley optional, for garnish

Instructions

  1. Heat skillet: Heat a cast iron skillet over medium-high heat with olive oil and 2 tbsp of butter until melted.
  2. Cook potatoes: Add potatoes, garlic, herbs, salt, and pepper. Cook until tender, then set aside.
  3. Cook steak: Increase heat and add remaining butter, then cook steak until desired doneness. Remove from heat.
  4. Combine: Add potatoes back to skillet and toss with steak. Adjust seasoning if needed.
  5. Serve: Top with parsley and enjoy!

Notes

  • If potatoes are not tender but starting to brown, add water and cover to steam until done.
  • Avoid overcrowding the pan for even cooking.
