These Healthy Berry Streusel Bars are a delicious treat made with a wholesome oat crust, a sweet berry filling, and a crunchy almond streusel topping. Perfect for a nutritious snack or dessert!

Berry Filling:
- 1 and 1/2 Tablespoons cornstarch
- 1 and 1/2 Tablespoons water
- 2 cups fresh or frozen mixed berries
- 1/4 cup pure maple syrup
- 1 Tablespoon coconut sugar, brown sugar, or granulated sugar
Crust + Streusel:
- 2 and 1/2 cups old-fashioned whole rolled oats or quick oats
- 1/2 teaspoon ground cinnamon
- pinch of salt
- 1 cup almond butter
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted (or use melted butter)
- For topping: 1/2 cup sliced or chopped almonds and 1 extra Tablespoon oats
Instructions
- Berry Filling: Mix cornstarch and water, then cook with berries, maple syrup, and sugar until thickened. Cool completely.
- Preheat oven and line baking pan with parchment paper.
- Make the crust/streusel: Combine oats, cinnamon, salt, almond butter, maple syrup, applesauce, and melted coconut oil. Press 3/4 of mixture into pan.
- Add berry filling, top with remaining mixture, almonds, and oats.
- Bake, cool, cut into squares, and refrigerate.
Notes
- Make the berry filling in advance for better consistency.
- Store leftover bars in the refrigerator for up to 1 week.
