Description

These Overnight Bacon and White Cheddar Scones are a savory delight, packed with applewood smoked bacon, white cheddar cheese, and chives. Perfect for breakfast or brunch!


Ingredients

  • 12 oz. applewood smoked bacon, cooked, drained and cut into 1/4 inch pieces, drippings reserved
  • 3/4 cup all purpose flour, + 1 teaspoon
  • 1 & 1/2 cups cake flour, + 1/2 teaspoon
  • 1 & 1/2 teaspoons baking powder, + 1/8 teaspoon
  • 1/4 teaspoon baking soda, + 1/8 teaspoon
  • 2 tablespoons sugar, + 3/4 teaspoon
  • 1 teaspoon salt, + 1/8 teaspoon
  • 4.7 ounces cold unsalted butter, 1 stick plus 1 1/2 tablespoons, cut into 1/4 inch cubes
  • 1/4 cup heavy cream, plus 1 tablespoon
  • 1/4 cup full-fat plain Greek yogurt, plus 2 1/2 tablespoons
  • 2 cups white cheddar cheese, grated
  • 1/4 cup chives, minced

Instructions

  1. Make the bacon: Cook and chop the bacon, reserving the drippings.
  2. Prepare the dough: Mix flours, baking powder, baking soda, sugar, and salt. Cut in butter, then add cream and yogurt. Mix in bacon, cheese, and chives.
  3. Shape and freeze: Shape dough into rectangles, freeze until firm.
  4. Top and bake: Brush with bacon drippings, sprinkle with pepper, sugar, and cheese. Bake until golden.
  5. Cool and enjoy: Let cool on a wire rack before serving.

Notes

  • You can store the scones in a covered container for up to 1 day.
