Description

Main Ingredients:

  • 4 large potatoes, peeled and cubed
  • 1/2 tsp salt
  • 8 oz bacon, bite-sized pieces
  • 4 Tbsp unsalted butter
  • 1/2 med onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour or Gluten Free 1:1 flour
  • 2 1/2 cups whole milk
  • 2 1/2 cups chicken broth or vegetable broth
  • 1 cup mild or sharp cheddar cheese, shredded
  • 3/4 cup sour cream
  • 1 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste

Instructions

  1. Cook Potatoes: Boil potatoes until tender.
  2. Cook Bacon: Saute bacon until crispy.
  3. Saute Onions: Cook onions and garlic in bacon grease and butter.
  4. Add Flour: Whisk in flour and add milk and broth.
  5. Combine Ingredients: Add potatoes, seasoning, cheese, and sour cream.
  6. Serve: Top with remaining bacon and desired toppings.

Notes

  • Russet or Yukon Gold Potatoes work well in this recipe.
  • For a smoother soup, blend a portion before adding bacon.
  • Store leftovers in the fridge for up to 5 days or freeze for up to 6 months.
