Main Ingredients:
- 4 large potatoes, peeled and cubed
- 1/2 tsp salt
- 8 oz bacon, bite-sized pieces
- 4 Tbsp unsalted butter
- 1/2 med onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour or Gluten Free 1:1 flour
- 2 1/2 cups whole milk
- 2 1/2 cups chicken broth or vegetable broth
- 1 cup mild or sharp cheddar cheese, shredded
- 3/4 cup sour cream
- 1 tsp salt, or to taste
- 1/4 tsp pepper, or to taste
Instructions
- Cook Potatoes: Boil potatoes until tender.
- Cook Bacon: Saute bacon until crispy.
- Saute Onions: Cook onions and garlic in bacon grease and butter.
- Add Flour: Whisk in flour and add milk and broth.
- Combine Ingredients: Add potatoes, seasoning, cheese, and sour cream.
- Serve: Top with remaining bacon and desired toppings.
Notes
- Russet or Yukon Gold Potatoes work well in this recipe.
- For a smoother soup, blend a portion before adding bacon.
