Ingredients

  • 1/2 cup breadcrumbs
  • 1 egg large

  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Gravy:

  • 2 tbsp olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch mixed with 2 tbsp water

Mashed Potatoes:

  • 2 lbs Yukon Gold potatoes peeled and chopped
  • 4 cloves garlic minced
  • 1/2 cup whole milk
  • 4 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley chopped

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Prepare Meatballs: Combine meatball ingredients, shape into balls, and bake for 20 minutes.
  3. Cook Potatoes: Boil potatoes and garlic until tender.
  4. Make Gravy: Sauté onion and garlic, add broth, Worcestershire sauce, and cornstarch slurry to thicken.
  5. Mash Potatoes: Drain and mash potatoes with milk, butter, salt, pepper, and parsley.
  6. Combine: Simmer meatballs in gravy, then serve over mashed potatoes.
